A brand film for Ristorante Isoletta built around mozzarella. What was filmed is the making of it by hand: a cheesemaker in whites over copper pans and wooden tubs, a façade with green shutters behind him. A film about a single ingredient works only through texture and the movement of hands — what you cannot taste, you have to be able to see.
Handwork at a copper vat stages itself: steam, wet hands, white curd, warm metal. What the camera has to manage is closeness without a hygiene problem — you film over the shoulder rather than over the vat.
Mozzarella is also a white subject on a light ground, and white on white is the hardest exposure a kitchen offers. What saves the form is light from the side: only the shadow turns a white surface into a sphere.
And a film about a single ingredient needs an ending that happens in the restaurant. Production without a plate explains a product; the plate explains why it is on the menu.
