The set starts outside, for a practical reason: a steakhouse in a side street gets looked for in the evening, not found at lunchtime. The illuminated box sign with the bull's head and the lettering is shot from below at an angle, so it stands against the dark sky while the street behind it carries on as a string of lights. Photograph the sign head-on and you get a logo; from below you get an address.

Inside, the room is kept dark — black wall panels, dark floor, timber tables — and the only bright points are the place settings themselves. The set-up follows exactly that: the camera stands so the row of tables runs into the depth, each white napkin one step further back. The rhythm of those bright patches replaces the light the room does not have.

The blue ceiling light above the bar stays in. It contradicts the warm light of the pendants, and in an interior picture that would be a fault — here it is the signature of the house and the reason the room does not look like a canteen in the evening.

For the food itself a dark restaurant imposes a simple order: photograph the tables first, while nothing is plated, then the dishes at the one spot where enough light arrives. A steak in a dark room needs a raking light to draw the crust; without it, it is a brown shape on a black plate.

And the tango evenings the text mentions are a separate session. A restaurant with a program has two faces, and trying to photograph both at once costs you both.
